干锅肥肠的做法

1、超市买来的猪大肠基本清洗的比较干净了如果是完全没有处理过的猪大肠,翻过来用面粉、醋使劲儿搓,然后用流水反复冲洗,有说用啤酒清洗口感更嫩,没试过,不晓得;
2、肥肠冷水入锅,加葱段、姜片和白酒(料酒),开大火煮,先煮上20分钟,后面还要焖。基本用筷子能戳透就完全煮熟了,注意掌握时间,煮过了的肠子没嚼劲儿,煮不够又咬不动,口感很重要;
3、调料,尤其泡生姜和泡红椒这两味调料,经过干烧,将其本身的酸辣源源不断地渗入肥肠中,完全消弭了肥肠本身的异味儿。
