1、海茸筋比较硬,最好提前几个小时浸泡,充分泡软后使用;
2、茄子先煸炒至软,可以减少烹调过程中的吸油量;
3、不需要煮太久,否则粉丝粘了会影响口感;
4、素高汤中也含有盐分,注意盐和生抽的用量。
